Bang in the centre of Saint Aubin, chef Laura Pelou adds a new twist to country recipes from Aveyron and her grandmothers’ cooking – hence the name! The spruce dining room, depicted by elegant oak parquet floors and lots of room between tables, believes in serving wholesome, simple fare such as leeks in vinaigrette, sprinkled with hard-boiled egg and croutons or a hummus of lentils, risotto of spelt and mushrooms – there is often a vegetarian starter and main course.
