Using European chairs in an otherwise Japanese atmosphere sets this dining room apart. Chef Masakazu Karibe finely grinds unpolished buckwheat from Nagano and Niigata into noodles, blending the buckwheat from these two regions to make soba without any added wheat flour. The noodles are cut thin to feel good going down the throat. Soba mash squeezed into balls using a cloth is served in the hot water used to boil the soba . Everything is in judicious proportion according to the chef’s finely tuned senses, and faithful to the ways of his mentor.
