The Waillimont Estate pays a fitting tribute to the Ardennes countryside and its riverside lodges set an idyllic scene for a getaway destination. The main building is home to a luxurious inn whose snug bar, wood-burning fire, marble floors and timber ceilings would be perfectly at home in an upmarket ski resort. The region takes pride of place in chef Jordan Boreux’ subtle blend of creative and traditional cuisine (knockout sauces!). Some of the textures and personal interpretations may surprise, but familiar Ardennes flavours remain a firm fixture.
