The son of a market gardener with a passion for vegetables, the chef infuses his cuisine with contemporary flavours and aromas. He gives free rein to his imagination and creativity in his carte blanche menu: scallops, fennel and blackcurrants; Black Angus beef, mushrooms, celery and vin jaune.
