The chef at the helm, sushi champion of France, trained in several of chef Nobu Matsuhisa’s establishments, no less. Impeccably cooked rice, moist tender chicken, melt-in-the-mouth salmon, juicy red tuna, firm seabass, spicy miso sauce dusted with fresh garden herbs, last-minute grated wasabi and a knockout selection of sakés (the sommelier and partner knows his business). The omakase menu features a festival of flavours for a fine dining experience that can be adapted to suit the appetites and wallets of everyone.
