The name ‘Dining Kappo’ was chosen for this to be a place where you can experience the new. The owner-chef wears a black kappo uniform and shows off his skills with a menu that is partly Japanese and partly Western. The tuna and squid tsukuri are served with a sauce made using white miso and cream cheese. His speciality is the mackerel sandwich. With all his dishes he proves he is no minimalist; he also makes good use of olive oil and other seasonings.
