The owner-chef makes the extra effort to offer gorgeous presentations of elaborately prepared cuisine. The menu, which begins with a hassun appetiser, conveys a joyous love for the seasons. In sweetfish season, it is served on a black lacquer panel featuring a waterfall and clear stream drawn in salt. In this elegant drawing, the sweetfish appears to be swimming up the waterfall, with the spray forming a mist. He once apprenticed in Kibune, a town famous for its river full of waterfalls.
