The huge vats of beer and the remarkable tree immediately catch the eye on entering the Staminée. Continue on into the elegant brasserie, where a trendy playlist and hip décor set the cosmopolitan scene. Veteran chef Stijn Rotthier puts his own spin on classical recipes. Examples include tender, juicy veal loaf with a melt-in-the-mouth millefeuille of potatoes and a madeira sauce subtly perfumed with truffle or a rich vol-au-vent in a hollandaise sauce steeped in spicy, fresh and acidic notes. Fortuin’s culinary signature can be summed up as punchy and authentic. Parents may be interested to know that children are welcome (special menu) and that there is a playground almost next-door to the restaurant.
