The aim here is to bring to the stage (“palco” in Portuguese) all those involved in this culinary project, from producers and their ingredients to the owners themselves, namely chef Marco Almeida and front-of-house manager Ana Almeida. Everything here revolves around the freshness and local provenance of its ingredients. Thanks to the restaurant’s zero-miles philosophy, the majority of these are sourced from local suppliers within a radius of 100km of Coimbra, as is highlighted (the producer’s name and the distance) alongside each dish. Menus are divided into Acts I, II and III, on which you can choose five, seven or ten “scenes”, alongside a vegetarian menu.
