In the chic little fine dining restaurant of Schwitzer's Hotel am Park, the open kitchen means you can watch chef-patron Cédric Schwitzer and team at work. Using excellent ingredients, they craft a four- or six-course "culinary journey. What makes a meal here special is that the menu and the course of the evening are modeled on a journey from Karlsruhe/Waldbronn to Paris. You are presented with your "tickets" in an envelope, with descriptions of the dishes, which symbolise the journey to Paris. Recipes grounded in the classics are given a successful modern makeover – precisely and elaborately crafted, without being overloaded or too playful. The fantastic langoustine, for example, is wonderfully juicy and full of flavour; it is served with a harmonious, robust jam made from the house currants and bacon, plus the special note of smoked fish dashi foam and tarragon oil. The set menu is available in two variants: omnivore or vegetarian. You can dine at the Chef's Table or take a seat at one of the other tables. Headed up by the charming Stephanie Schwitzer, the service is cordial and professional; from time to time Cédric Schwitzer serves a dish himself and explains the idea behind it. The location right by the Kurpark makes this an inviting place to stay.
