A chic stand-up sushi bar in the style of a standing bar. The restaurant shows great inventiveness in the sweet and sour vinegared rice and combinations of toppings. In addition to the typical tuna and gizzard shad, sushi topped with eggplant agebitashi (deep-fried, then soaked in dashi) or red bean paste are available. Reservations, orders and billing are all managed on a digital system. A sushi shop that began as a street stall in Edo ties is reborn in a version fit for today’s Japan.
