Run by the protégés of Chef Amamoto, Sushi Touryuumon has radically revamped its omakase menu to mostly feature cooked dishes in the kappo tradition, alongside a couple sushi courses. Top-quality ingredients in season are flown in from Japan, including the freshest catch from Toyosu Market. Exact courses spin with the season, but the signature kamamushi is always included, pairing Hokkaido rice with the most iconic produce available each month.
