It isn’t often you hear of a restaurant that gives free rein to its chef’s desire and passion for food, life and nature—yet at Evvai that is exactly what you’ll find! Chef Luiz Filipe Souza’s proposition, which successfully fuses Brazilian and Italian influences, yields dishes that are not only visually striking but also full of skill, knowledge and balance (it is remarkable to see how the chef handles temperatures, as though they were just another texture). The offering takes shape as a single tasting menu called Oriundi (symbolising the exchange of cultures), with delicate opening snacks evoking the colours of the Brazilian and Italian flags, followed by accomplished dishes such as the Bomba de vieira (a scallop-filled croquette), which evolves each season and is always on the menu. It’s no bad idea to include, for dessert, a selection of cheeses and melipona honeys, produced by Brazil’s native bees!
