This intimate restaurant is run by a couple from South America who earned their stripes in fine dining establishments in Europe, Asia and the US. At both lunch and dinnertime, the chef, who worked at Astrid y Gastón, David Toutain and Mauro Colagreco, devises blind menus featuring the freshest produce and showcasing a keen sense of contrasts. Acidity, vinegars and condiments punctuate the dishes, which are unfussy, but full of character. Front of house, Mara herself designed the minimalist decor in a palette of khaki greens, creating a cosy atmosphere in which diners savour, for example, a striking combination of shiso, black garlic and mushroom broth, or thin slices of scallops with cauliflower and combawa.
