A meal in this stylish villa starts with the solicitous and heartfelt welcome of charismatic Adrien, who will later be your host in the bespoke glazed wine cellar where you are invited to select a bottle yourself. Jeremy Vandernoot has harnessed his creativity to devising menus whose craftsmanship, bordering on complexity at times, invariably unveils a subtle harmony of flavours and textures. For example, on one hand, he prepares a sorbet of confit tomatoes out of which he makes a house-made ketchup that is flanked by a gazpacho, while on the other, he stuffs a cherry tomato with slivers of lemon marigolds, coating them in delicately perfumed tomato water. The team’s enthusiasm and expertise can be tasted in each bite.
