Chef David Jesus is a strong advocate of the idea that it is possible to create great food by using what nature provides for us, and his restaurant is clear proof of this. The menu here changes with the seasons and according to the creativity of a chef who is always looking to innovate and create new combinations. Dishes include kimchi nigiri, a croquette with a creamy centre and superb texture; the “cuttlefish from my roots”, with rice tagliatelle, passion fruit curry and crispy cabbage; and to round things off, the mouthwatering vegetable brioche with almond milk and condensed tamarind milk.
