Works of art line the walls of Neil Dieryckx-Visschers’ cheerful establishment, but the chef’s true artistry lies in his vibrant cooking. Dieryckx-Visschers sensitively reinterprets time-honoured family favourites and allows the ingredients to shout their name, albeit with the odd Asian tang. Examples include lamb from the Vandewalle butcher’s, served rare with a scrumptious layer of fat, while crisp green asparagus, braised wild garlic, black garlic cream, sautéed morels and a punchy gravy complete the feast. Both the set menu and the à la carte lineup sing an ode to first-class produce. What’s not to like?
