This gem of a bistro, which fully lives up to its name, is established in a country town known for its ties to former French president, Giscard d’Estaing. Chef Sylvain Revelant (stints with Édouard Loubet and Hélène Darroze, among others) concocts the kind of hearty fare that always goes down a treat. Predominantly local ingredients set the scene in crisp, fragrant dishes, e.g. asparagus and pine buds; croaker, wild mushrooms and a shellfish emulsion.
