Liaoning fisherman-style dishes are re-created here with produce from the Changbai Mountains and fish from the Bohai Sea and Liao River. The silky and custardy rice paddy field crab tofu is loaded with umami; the sliced sea snail sautéed with scallion has a bouncy texture and brims with wok hei and aromas.
