Chef Borg Da Silva rolls out his mastery of classical French cuisine, as the cavalcade of polished dishes flanked with big-boned gravies illustrates. An example: medium rare duck breast with a succulent layer of fat, paired with a blueberry jelly, al dente salsifies dusted with horn of plenty mushrooms, dauphine potatoes and a subtle veal gravy.
