Anto, as in chef Anthony Bisquerra, originally from France's South-West, who fell in love with Haute-Savoie, with its mountains and its lakes. He tells this story at his restaurant in Annecy's old town in a harmonious decor of whitewashed walls, wood and stone. His cuisine is a skilful balancing act, juxtaposing Savoie with other regions that he knows well. For example, scallops flirt with Espelette pepper and pine buds; duck from Semnoz comes with a Swiss chard and Abondance cheese gratin; and chocolate and piquillo pepper ice cream find their perfect match in the smoked Sriracha. An absolute standout.
