The first stateside branch of the acclaimed Yasu Toronto, this outpost is akin to a jewel in the crown of area sushiyas. It's a minimalist, wonderfully lit, and rather Zen den, with an L-shaped counter seating some ten lucky guests as well as a few tables lining one side of the room. A mingling of dark and light colors along with a "metallic" backdrop help things along nicely.This omakase opens with a parade of sashimi, like cherry trout, sea bream, and scallop—each slice carefully arranged on an ornate tray with a dab of wasabi, ginger, and soy. Nigiri follows next—think snappy striped jack over perfectly formed shari, golden eye snapper with yuzu kosho, and snow crab dipped in warm dashi. Tuna served three ways is a signature way to seal the meal.
